Old recipe I found in my homemade cookbook. I made two variations and thought of a lot more I could make with this recipe. Light and so amazing. Surprised the employees at my husbands work place. They all raved and were so thankful for a nice treat.

Ingredients For banana cinnamon mini loaves

1 boxyellow cake mix
-
1/2 cwater
-
1 cof very ripe bananas (2)

1/2 cbutter or margarine, softened

2 tspcinnamon, ground

3eggs
-
1 cchopped walnuts
How To Make banana cinnamon mini loaves

1Heat oven to 350 F. Grease 4 to 5 mini loaf pans.

2Combine all ingredients except walnuts. Beat on low with a mixer, scrap. Turn mixer to medium high and mix for 2 minutes. Pour into pans.

3Bake 30 minutes or until toothpick comes out clean.

4Variations: chocolate chips, pecans, chocolate cake mix This also can be made in a bundt pan. Adjust the baking time to 43-53 minutes. If you want to make larger loaves, adjust the time to 40-45 minutes, then ck.

5Glaze: 1/2 cup of can frosting 2-3 tsp of milk 1/4 tsp cinnamon
