This is an old recipe that I believe originally came from a Nestle's Butterscotch Morsel's package. its a great old standby that all kids seem to love. We used to make these for Christmas every year.

Ingredients For scotch-a-roos

  • 1 c
    light corn syrup
  • 1 c
    white sugar
  • 1 1/2 c
    peanut butter
  • 6 c
    rice crispies
  • 1 c
    semisweet chocolate chips
  • 1 c
    butterscotch chips
  • 2-3 Tbsp
    chopped peanuts, optional

How To Make scotch-a-roos

    Generously butter a 9x13 inch baking pan. Set aside. In a large pot, mix together corn syrup, sugar, and peanut butter. Cook over medium heat, stirring until peanut butter melts. Watch closely at this point. Bring mixture just barely to a boil. (Bubbles should just be beginning to rise. If you boil too much bars with be hard.) Remove from heat, and stir in crisp rice cereal. Transfer mixture into a well buttered 9x13 inch pan. With your hands well buttered, pat it down into pan.

    In a medium saucepan, over medium low heat, melt chocolate chips and butterscotch chips until smooth. Spread over top of bars and let bars cool. Cut into squares. OPTIONAL: If using chopped peanuts, sprinkle them on the bars as soon as you frost them, before chocolate/butterscotch hardens.
