Ingredients For rum balls

2 1/2 ccrushed vanilla wafers (about 75 wafers)

1 cground pecans

1 cconfectioners' sugar

2 Tbspcocoa powder

2 tspcocoa powder

1/4 cdark rum
-
3 Tbsphoney
-
2 Tbspwater

How To Make rum balls

1In a large mixing bowl, combine the wafer crumbs, pecans, confectioners sugar and cocoa (yes 2 tablespoons plus 2 teaspoons. I don't know why the extra but it makes a BIG difference.)

2Mix the rum, the honey, and water; stir into dry mixture. Mixture should be moist enough to form balls.

3Shape into balls the size of small walnuts. Roll in extra confectioners sugar or extra wafer crumbs.

4Store in airtight container. The longer they set, the better (and STRONGER) they get. You can also cover them in your favorite chocolate covering. If you prefer a nonalcoholic recipe, substitute the rum with orange concentrate and a splash of rum extract.
