These are always on the list to make when I need something last minute! Someone gives you a gift unexpectedly, or anytime an extra gift is needed when you are just plain tuckered out or ran out of time. (Happens every year!...) And the rest just gets happily added to the goodie tray! ;) They are VERY good, quick and easy, and looks like you planned and fussed all along! ;) (photo from bing images)

Ingredients For raspberry fudge balls with almonds

1 cup(6 oz.) semi-sweet chocolate chips

8 oz.cream cheese, softened

3/4 cupfinely crushed nilla wafers (about 20 cookies)

1/4 cupseedless raspberry jam

3/4 cupfinely chopped almonds, i use my mini chopper for this
How To Make raspberry fudge balls with almonds

1In a microwave, melt chocolate chips; stir until smooth. Cool slightly. In a small bowl, beat the cream cheese and melted chocolate until smooth and blended. Stir in the wafer crumbs and jam. Refrigerate for 4 hours or until firm. Shape into 1-in. balls; roll in almonds. Store in an airtight container in the refrigerator.
