This out of our local newspaper, author unlisted. It's just another one of those quacky recipes and I wanted to put it here for safe keeping until I have time to try it.

Ingredients For pinto bean fudge

  • nonstick veg. spray
  • 2 c
    cooked pinto beans
  • 1/3 c
    butter or margarine
  • 1 c
    unsweetened cocoa
  • 4 oz
    unsweetened baking chocolate, melted
  • 1 Tbsp
    vanilla
  • 2 lb
    powdered sugar, sifted
  • 1 c
    chopped pecans or walnuts

How To Make pinto bean fudge

  • 1
    Spray a 9" x 13" pan or dish with veg. cooking spray. Set aside.
  • 2
    Mash or puree beans. Add butter or margarine, cocoa, baking chocolate and vanilla.

    Mix in powdered sugar gradually.
  • 4
    Add chopped nuts of your choice and press into the prepaired pan. Cut into desired pieces and store in the refri.
