I came up with this when I was trying to think of some kind of a Christmas treat for the kids. Us adults have rum balls... so, I thought this would be perfect for the kids! Well, the kids AND adults loved this!

These peppermint bars are rice cereal treats with a Christmas twist of peppermint and chocolate flavor. The marshmallow cereal treat in the center has a slight peppermint flavor. Then, they're coated in white or milk chocolate and sprinkled with crushed candy canes. Similar in flavor to peppermint bark, these are a delicious treat to complete your holiday goodie tray. They'd make tasty gifts too.

Ingredients For peppermint balls

  • 5 c
    Rice Krispy cereal
  • 4 c
    mini marshmellows
  • 4 Tbsp
    butter
  • 2 1/2 tsp
    milk
  • 1 tsp
    peppermint extract
  • 1 1/2 c
    semi-sweet chocolate chips
  • 1 Tbsp
    cooking oil
  • 1 1/2 c
    white chocolate chips
  • 2
    peppermint candy canes, crushed
  • 36-40
    mini muffin papers

How To Make peppermint balls

Test Kitchen Tips
We used a cookie scoop to portion the peppermint balls. Make sure to wet your hands and keep wetting them to make the balls.
  • Melt the butter over medium heat in a very large saucepan.

    Make a basic Rice Krispy Treat by melting the butter over medium heat in a very large saucepan.
  • Add the marshmallows and stir until melted.

  • Add in milk and peppermint extract.

    While the marshmallows are melting add in milk and peppermint extract.
  • Add cereal and stir until coated well.

  • Break off a small amount of the coated cereal and form into a small ball.

    Remove from heat and work quickly with damp hands, break off a small amount of the coated cereal and form into a small ball. Place the ball on a waxed paper-covered cookie sheet. Continue doing this until all the balls are formed.
  • Melt the chocolate until smooth.

    Melt semi-sweet chocolate in the microwave according to the directions on the bag. If chocolate is too thick, add 1 Tbsp of cooking oil to thin it enough to coat the balls.
  • Dip each ball in the chocolate.

    Dip each ball in the chocolate and smear the chocolate all over the ball with your hands making sure to evenly but thinly coat the ball.
  • Place back on the waxed paper and sprinkle with crushed candy canes.

    Place back on waxed paper-covered cookie sheet. Repeat this for half the balls. Sprinkle the crushed candy canes over the top of the balls before they dry.
  • Melt white chocolate until smooth.

    Melt the white chocolate.
  • Dip treats in white chocolate and sprinkle with crushed peppermint candies.

    Repeat the method with white chocolate by coating the other half of the balls and sprinkling the tops with sugar. When completed, the peppermint balls can be placed in mini muffin papers for serving.
