This is the best recipe for Peanut Brittle that I have ever tried... It is delicious tasting and is so good that I always get requests at the holidays to make it.... around July too from my son who I tell it is way too hot for peanut brittle in July LOL.. he is always like how long till Christmas??? LOL enjoy **Just a note this is extemely hot while you are making this, please if you have small children or pets get them OUT of the kitchen while you are making this for this is dangerous if you accidentally spill some while cooking or pouring onto the pan. I place the sheet pan on the other side of my stove to pour so I don't accidentally burn myself or melt my countertop while it is cooling.

Ingredients For peanut brittle

  • 2 c
    sugar
  • 1 c
    corn syrup ( i use light)
  • 1/2 c
    water
  • dash of salt
  • 2 c
    raw peanuts
  • 1 1/2 Tbsp
    butter (no margarine)
  • 1 1/2 tsp
    vanilla
  • 2 tsp
    baking soda

How To Make peanut brittle

    Combine sugar, corn syrup, water & salt in big heavyweight pan & cook over medium low heat to soft ball stage (230 degrees) Stirring occasionally.

    Add in peanuts stirring to incorporate. Cook to 300 degrees watching and stirring so not to burn (be very careful mixture is dangerously hot).

    Remove from heat and blend in butter and vanilla very carefully stir in soda, mixture will expand and bubble like crazy so be very careful with this step.

    Pour into (BUTTERED,please make sure you butter your pan or the brittle will NOT come out) sheet pan spreading out quickly. Cool completely and crack(break) into bite size pieces.
