Ingredients For peanut brittle (sallye)

3 cgranulated sugar

1-1/4 cwater

1/2 clight corn syrup

3 Tbspbutter
-
1 lbspanish peanuts (not salted)

1 tspbaking soda

1 Tbspwater
-
1-1/2 tspvanilla extract
How To Make peanut brittle (sallye)

1Butter 2 large cookie sheets and set aside

2Combine sugar, 1-1/4 c water and corn syrup in large cast iron skillet or heavy saucepan Bring to boil over medium heat, stirring constantly

3When mixture is boiling, STOP STIRRING Boil mixture until candy thermometer registers 270 degrees Remove from heat

4Add butter and peanuts Return to heat and continue cooking until thermometer registers 300 degrees (or a teaspoonful of syrup will separate into brittle threads when dropped in cold water) Remove from heat once again

5Mix baking soda, the 1 tablespoon water and vanilla into hot candy When bubbles susbside, pour candy onto the prepared cookie sheets as thinly as possible

6Cool, then break into pieces Store in airtight container with wax or parchment paper between layers
