During my time as working in Nursing Homes for more than 27 years as a Therapeutic Recreation Director I used this recipe so many times with my Alzheimer residents. They had so much fun making these and when they were all made the residents where so proud and would give them to the Nurses at the nursing station and their family when they came to visit.The roses can be made for weddings also; using different colors for the wedding theams.I have severl candy molds and used different colors. Like yellow ducks, pale purple posies and green for tiny green frogs. Just get yourself some duck molds for baby shower candies or posies molds for a girls party or even frog molds to tickle little boys at their party. These can be used to decorate cookies and cakes.

Ingredients For norma's cream cheese mints

  • 1 pkg
    (3 ounce) cream cheese softened at room temp.
  • 1 Tbsp
    milk
  • 3 1/2 c
    confectioners' sugar
  • 1/2 tsp
    pepperment extract or almond extract
  • 2 to 3
    drops of rd food coloring
  • 1/2
    grandulated sugar for coating

How To Make norma's cream cheese mints

  • 1
    Using a mixing bowl beat cream cheese with milk until smooth.

    Add confectioners sugar, peppermint extract and food coloring and beat until well blended.

    Spoon out small amount to fill molds. Roll in sugar and press small amounts of mixture into rose shaped candy molds or any mold you might want to use.

    Turn molds over and tap to remove from molds and dip in sugar again if more is needed and place on a cookies sheet lined with waxed paper and place in refrigerator to air-dry.

    Remove from refrigerator and store in airtignt container.
