Ingredients
- 3 tablespoons butter, softened
- 3 tablespoons corn syrup
- 1/4 teaspoon peppermint extract
- 1/4 teaspoon salt
- 2 1/2 cups powdered sugar
- 2 cups milk chocolate chips
- 1/4 cup shortening

Step 1Combine butter, syrup, extract and salt. Add powdered sugar and beat well. Mixture will be crumbly. Knead smooth and pliable. Roll to 1/8" thick on powdered sugar. Cut with 2" cookie cutters into circles and place on waxed paper lined cookie sheets. Freeze 15-20 min until hardened. Melt chips and shortening over hot but not boiling water, stir until smooth. Spoon about 3/4 tsp on each mint piece and spread with spatula to cover the top. Refrigerate 20 min to harden chocolate. Turn over and repeat with the other side.
