Ingredients For irish potato candy

1 smpotato

2 1/2 cpowdered sugar

1 tsppure vanilla extract

peanut butter, creamy
How To Make irish potato candy

1Cook potatoes with skins on. Let cool when done.

2Take skins off and mash the potato.

3Add powdered sugar and vanilla, enough sugar to make a ball of dough.

4Use a 1/2 cup of powdered sugar to roll out the dough sprinkle a little on top.

5Once rolled out spread the peanut butter over all of it.

6Roll it up like a jelly roll and wrap in wax paper.

7Refrigerate 4 hours or over night before serving.
