You can find the recipe for coconut oil peanut butter fudge all over the web. I've made it and I like it. But...I thought I could improve on it! My version is still healthy and very low in sugar, but I think it tastes better than the standard version. I've added a little butter and a little raw sugar to give it more of a traditional taste. I think it's yummy and the kiddos love it! If you're looking for ways to get more healthful coconut oil into your diet, give this a try!

1/4 cbutter

1/4 cnatural sugar(sucanat or turbinado)

1 Tbspmaple syrup or honey

3/4 ccoconut oil*

1/2 tspvanilla

1/2 cnatural peanut butter
How To Make healthycoconut oil peanut butter fudge(my version)

1melt butter in saucepan and add sugar and syrup or honey. Bring to a boil, reduce heat and boil gently for about 2 min. Remove from heat and stir in coconut oil and vanilla. Add peanut butter and blend well. (You may want to use a food processor or immersion blender to get the ingredients to really come together. Otherwise just whisk the living daylights out of it!) Pour into a buttered 8x8 pan and place in refrigerator until set up. Cut in small squares. Store in fridge.

2*The best option is extra virgin coconut oil. However, your fudge will have a coconut-y taste if you use it. If that's a problem for you, you can use a more refined oil like Spectrum or Luanna that have a more neutral taste.
