I have a sweet tooth and I'm always looking for recipes that are good but easy and won't heat up the kitchen, especially with our Texas summers. Here is one I think you will enjoy.

Ingredients For crispy pecan- coconut clusters

  • 2 c
    pecans pieces, toasted
  • 16 oz
    white chocolate chips or almond bark
  • 2 c
    crisp rice cereal
  • 1 1/2 c
    coconut, flaked

How To Make crispy pecan- coconut clusters

    Spread pecans in a glass pie plate. Microwave on 100% power 6 to 8 minutes or until toasted , stirring after every minute. Set aside.

    Place white chocolate in a 2 quart glass measure. Microwave on 50% power 3 to 4 minutes or until melted, stirring after 2 minutes. Let cool 2 minutes. Stir in pecans, cereal and coconut. Drop mixture by rounded teaspoonfuls onto waxed paper. Let cool completely.
