My mother made these every year for Christmas. She would make them and freeze them thinking they would last until Christmas. FYI - they are GREAT frozen. Just ask all 6 of us kids!!

Lynelle's mom knew what she was doing when she made this recipe. It's not your standard chocolate peanut butter ball recipe. It's so much more decadent. The peanut butter filling is smooth, creamy and just melts in your mouth. Maraschino cherries add a lovely cherry flavor while the coconut gives a bit of texture to every bite. The chocolate coating is perfection. These easy peanut butter balls will be a delicious addition to a dessert table.

Ingredients For christmas peanut butter coconut cherry balls

  • BALLS
  • 1/2 c
    butter, softened
  • 1 1/3 c
    peanut butter, smooth or crunchy
  • 4 c
    powdered sugar
  • 24
    maraschino cherries, finely chopped
  • 2 c
    coconut
  • DIPPING CHOCOLATE
  • 6 oz
    milk, semi-sweet, or dark chocolate chips
  • 6 Tbsp
    paraffin

How To Make christmas peanut butter coconut cherry balls

  • Butter, peanut butter, powdered sugar, cherries, and coconuts mixed in a bowl.

    To make the balls, combine the butter, peanut butter, powdered sugar, maraschino cherries, and coconut in a large bowl using a mixer.
  • Ingredients rolled into balls.

    Roll into very small balls.
  • Bowl placed in freezer to chill.

    Place in the freezer for several hours or preferably overnight.
  • Melting chocolate and paraffin in a double boiler.

    To make the dipping chocolate, melt the chocolate chips and paraffin in a double boiler.
  • Peanut butter balls drying on a cooling rack.

    Dip the frozen balls into the melted chocolate and drain on a rack over waxed paper.

    You can double dip if you want. I usually make a double batch of this recipe. Enjoy!
