Chocolate-covered cashews are my favorite candy. Though messy to make these are worth the mess.

Ingredients For cashew truffles

1 cwhipping cream

1/4 cbutter
-
12 ozsemisweet chocolate tiny morsels

6 ozmilk chocolate tiny morsels

1 tspvanilla

16 ozcashew pieces, chopped
How To Make cashew truffles

1In small saucepan, bring cream and butter to a boil. Remove pan from heat. Add chocolates and vanilla and whisk until mixture is creamy and smooth. Refrigerate about 2 1/2 to hours, until firm enough to handle.

2Form into 1" balls8*, then roll in cashews.

3Store in refrigerator.

4*Note: It's easiest to take a teaspoonful of chocolate and roll it right into balls in the chopped nuts rather than try to make a nice ball before rolling.
