Ingredients For caramels

  • 1/2 c
    heavy cream
  • 1/4 tsp
    vanilla
  • 6 Tbsp
    butter, cut into sm pcs.
  • 1 1/3 c
    light brown sugar

How To Make caramels

  • 1
    combine all ingredients with 1 T. water, stir over med heat until sugar dissolves, bring to a boil and cover for 3 mins. uncover but DO NOT STIR, continue boiling until temp reaches 240.
  • 2
    Pour caramel into pan, let cool, while slightly wet, score caramels then leave to harden completely. once firm, cut and wrap.
