I've been experimenting with coming up with some Christmas cookie/candy ideas that will work for those in my family with dietary restrictions. These turned out GOOD!! Took them to my Mom's on Sunday and she couldn't quit eating them! And they couldn't be simpler!

Ingredients For "almond joy" candy(gluten free,refined sugar free)
- COCONUT CANDY

2 cunsweetened coconut

1/2 cfinely ground almonds

1/4 choney or agave nectar

1single-serve packet of stevia(could also just use a bit more honey)

3 Tbspcoconut cream(the thick stuff that separates from the watery stuff in the can of full-fat coconut milk)

2 Tbspcoconut oil
- CHOCOLATE DRIZZLE

2 Tbspcoconut oil

2 Tbspcocoa

2single serve packets of stevia

1 Tbsphoney or agave
-
1/4 tspvanilla
-
sliced or slivered almonds-enough for one per piece of candy
How To Make "almond joy" candy(gluten free,refined sugar free)

1Put all of the coconut candy ingredients into the bowl of a food processor and blend into a paste-like consistency.

2Roll the mixture into small(i in.) balls and place on parchment or wax paper lined baking sheet. Press a slivered or sliced almond into the top of each. Place in the freezer while you make the chocolate drizzle

3Combine the drizzle ingredients in a small saucepan and heat on med-low until coconut oil is melted, whisking to combine well.

4Put the chocolate mixture into a small zipper bag, snip off a small piece of one corner, and squeeze ribbons of the mixture over the candies. Pop back in the freezer to firm up the chocolate(only takes a few min.), then place in a container and store in the fridge.
