  • 16 oz
    zucchini, cubed
  • 2 1/4 c
    flour
  • 1 1/4 c
    sugar
  • 1/2 c
    shortening
  • 1/2 c
    milk
  • 2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • 1/4 tsp
    cloves
  • 2 lg
    eggs
  • 1 1/4 c
    walnuts, chopped

    In blender puree zucchini until smooth. You need 1 1/2 cups pureed for the recipe. Oven to 350 degrees. Grease 9x13. Combine all but nuts in a large bowl. Blend until just mixed, then beat on high 2 min or until smooth, scraping bowl. Stir in walnuts. Bake 30-35 min or until toothpick is clean. Cool completely in pan.

    NOTE: the original recipe says frost with sour cream frosting, but I could never find any recipe for that, so I assume she meant to frost with a cream cheese frosting.
