Ingredients For zucchini cake

  • 2 md
    zucchini (grated on big holes on grater)
  • 3 lg
    eggs
  • 200 g
    caster sugar
  • 1/2 c
    olive oil
  • 350 g
    continental flour
  • 15 g
    baking powder
  • 1 tsp
    cinnamon powder
  • 1 can
    fruit salad in juice(strain )
  • 1 sm
    amount of extra unsalted butter
  • 50 g
    extra continental flour
  • 1 bag
    vanilla sugar (8 g )
  • 25 g
    extra vanilla sugar
  • 25 g
    extra unsalted butter

How To Make zucchini cake

    Beat eggs and sugar in a bowl with an electric mixer until light and fluffy.Slowly pour in 1/3 of oil and add 1/3 of flour and still mix.Repeat this until you use all oil and flour,then add baking powder,zucchini and lightly fold in,now with spatula.

    Grease 29 cm diameter round baking pan 3 cm high with unsalted butter and dust all over with flour(bottom and sides)Pour the mixture,dust with cinnamon and add the fruit and sprinkle with streusel.Put into preheated oven at 170 C and bake about 35-40 minutes or until nice and golden.

    Streusel: 50 g continental flour,1 vanilla sugar,25 g caster sugar and 25 g unsalted butter. put all ingredients into a small bowl and with your finger mix all together,make a crumbs.
