Ingredients For zucchini cake

  • 2 md
    zucchini
  • 2 1/4 c
    all purpose flour
  • 1 1/4 c
    sugar
  • 2 lg
    eggs
  • 1/2 c
    vegetable shortening
  • 1 1/4 c
    chopped walnuts
  • 1/2 c
    milk
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 2 tsp
    baking soda
  • 1/4 tsp
    nutmeg
  • 1/4 tsp
    cloves
  • SOUR CREAM FROSTING
  • 2 1/2 c
    confectioners' sugar
  • 1 tsp
    vanilla
  • 1/2 c
    sour cream
  • 1/4 c
    vegetable shortening

How To Make zucchini cake

  • 1
    Mix all dry ingredients. Beat sugar, eggs and shortening. Add dry ingredients to wet ingredients, mix well.

    Bake at 350 degrees 13 x 9 pan 30 – 35 minutes, until toothpick comes up clean. Let Cool
  • 3
    Mix all frosting ingredients at low speed until mixed. Increase to high 1 minute or until fluffy. Frost and enjoy
