My sister-in-law shared this recipe with me and it is delicious! The zucchini makes the brownies nice and moist and you'd never know there was zucchini in these brownies!

Ingredients For zucchini brownies

1/2 cvegetable oil

1-1/2 cwhite sugar

2 tspvanilla extract

2 cflour
-
1/2 cunsweetened cocoa powder

1-1/2 tspbaking soda

1 tspsalt
-
2 cshredded zucchini, drained

1/2 cchopped walnuts, optional
- FROSTING

6 Tbspunsweetened cocoa powder

1/4 cbutter
-
2 cpowdered sugar
-
1/4 cmilk
-
1/2 tspvanilla extract
How To Make zucchini brownies

1Preheat oven to 350 degrees. Grease and flour 9 x 13 pan

2In large bowl, mix together the oil, sugar, and 2 tsp. vanilla extract. Combine the flower, 1/2 c. cocoa, baking soda, and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread in pan.

3Bake for 25 to 30 minutes until brownies spring back when touched.

4To make the frosting, melt together the cocoa and butter; set aside to cool. In a medium bowl, blend together the powdered sugar, milk, and vanilla. Stir in the cocoa mixture. Spread over cooled brownies.
