I picked fresh zucchini from my garden today and wanted some good zucchini bread. I have tried so many but my sister has always made this one and it is so good and moist. I don't know the origin of her recipe so I can not post it but she has been making it for many years. I put the frosting on top for a different taste and it was so yummy.

Ingredients For zucchini bread-jamie

  • PREHEAT OVEN AT 350° GREASE TWO LOAF PANS
  • 3
    eggs beaten
  • 1 c
    oil
  • 2 1/4 c
    sugar
  • 2 Tbsp
    vanilla extract
  • 1 tsp
    cinnamon
  • 2 Tbsp
    baking powder
  • 1/4 tsp
    soda
  • 2 Tbsp
    salt
  • 3 c
    plain flour(i used bread flour)
  • 2 c
    fresh grated zucchini
  • 1 c
    chopped walnuts
  • FROSTING-OPTIONAL
  • 4 oz
    cream cheese, room temp
  • 1 c
    confectioners' sugar
  • 1 Tbsp
    vanilla extract
  • 1 Tbsp
    orange juice or you may like to use lemon juice

How To Make zucchini bread-jamie

    Put the first 4 ingredients in a large mixing bowl and mix together.

    Next 5 dry ingredients mix together then add to the wet mix. This will seem dry but I used the electric mixer and mixed some.

    Add the zucchini into this mixture and mix well it will start to become wet. After mixing well add the walnuts and stir in well.

    Pour equal amounts into the two loaf pans that have been greased and floured. Bake at 350° for at least 45 minutes in center of oven. Check with tooth pick for doneness, do not over cook it will be dry. Every oven is different so you will just have to judge and see if it is done enough. Wait 10 minutes and turn bread out on a wire rack to cool. I like to keep the top side up.

    Optional Icing Mix the cream cheese that is at room temp together with all the other ingredients and set aside till bread is done. When the bread has been turned out of the pan I will ice the bread while warm so the flavor can soak in. Let stay out atleast several hours then wrap and keep any left over in the refrigerator .

    You can make these loaves up and wrap in freezer wrap then place in a zip lock freezer bag and freeze.
