I found this recipe in our monthly Electric Co-op magazine.While I'm not a peach lover, I still had to try it. Turned out really well & with a few modifications, it will be even better!

Ingredients For yummy peach cake
- CAKE

1 1/2 csugar

2 cflour
-
1 tspbaking soda

1 tspcinnamon

1 tspnutmeg

1/2 tspallspice

1/2 tspsalt

1 tspvanlla

1 cbuttermilk
-
1 coil
-
3eggs (beaten)
-
1 cchopped nuts ( i use pecans)

1 1/2 cpeaches (peeled & sliced)
- SAUCE
-
1 csugar
-
1/2 tspbaking soda
-
1/2 cbutter
-
2 tspvanilla
-
1/2 cbuttermilk
How To Make yummy peach cake

1CAKE

2Preheat oven to 300 degrees. Spray Bundt pan with cooking spray. (I use bakers joy).

3Combine all dry ingredients in a large bowl.

4in another bowl, combine buttermilk, eggs, oil & vanilla.

5combine wet and dry ingredients and mix well, either by hand or with mixer.

6fold in peaches and nuts and pour into prepared pan.

7bake 1 hour or until firm.

8SAUCE

9while cake is baking, mix all sauce ingredients in pan. Bring to a boil over medium heat. Stir constantly.

10reduce heat and continue to cook until slightly thickened.

11Immediatly after removing cake from oven, pour hot sauce slowly over cake. As it saoks into cake, continue pouring until all the sauce is used.

12Cool & turn out onto a large plate.

13*NOTE* the next time I make this, I'll cube the peaches so they will be mixed all in the cake.
