This lovely dense cake is similar to a sponge cake. It is dry but the tasty syrup allows it to become moist and tender. Cut this lovely cake into diamonds to serve. You can add lemon or orange juice to the sugar water or you can make it without the lemon or orange juice if you prefer.

1 1/2 cwater

1 Tbspfresh squeezed lemon juice or orange juice
- CAKE

4 lgeggs

3/4 cgreek yogurt

3/4 cvegetable or olive oil

3/4 csugar

1 1/2 cflour
-
3/4 ccornmeal
-
3 tspbaking powder
- GARNISH - *OPTIONAL* YOU MAY SERVE PLAIN IF PREFERRED

1/2 tsporange zest

1/8 cground pistachios or walnuts
How To Make yogurt cake with syrup

1Syrup: Make ahead of time to allow to cool. Add sugar and water to a small pot and bring to a boil. Stir to prevent scorching and boil for 5 - 10 minutes. Remove the pot from the stove and add in the lemon juice. Stir and set aside until needed.

2Cake: Preheat oven to 350 F. Prepare your pan, grease with a little butter or olive oil and set aside until needed.

3In a large mixing bowl, stir together, the eggs, yogurt, oil and sugar. Next add the dry ingredients (flour, cornmeal and baking powder) and mix well.

4Pour into the prepared pan and bake in a 350 F oven for 30 minutes or until golden brown.

5Remove the cake from the oven and cut into diamond shapes, and then pour the cooled syrup over the cake. For best results allow the cake to sit for several hours before serving. If you like, you may garnish the cake with ground nuts and orange zest. Or you could garnish with one or the other or serve it plain.
