Since I received a copy of this recipe in 1980, I have baked this cake numerous times, and it is so good! I love that it doesn't need any eggs, and the ingredients are usually in my cupboard, so I can bake it when the spirit moves me to bake a cake. With a dusting of powdered sugar on top, or without, or with frosting, it is delicious and it can be made and baked in the pan.

- SIFT ALL DRY INGREDIENTS TOGETHER

1 1/2 call-purose flour

1 csugar
-
1/4 ccocoa powder, i used cacao powder

1/2 tspsalt

1 tspbaking soda
- WET INGREDIENTS:

1/3 coil, i used safflower oil or vegetable oil

1 tspvinegar, i used raw organic apple cider vinegar
-
1 tspvanilla extract
-
1 ccold water

1Preheat the oven to 350 degrees. Grease and flour a 9-inch cake pan.

2Sift the dry ingredients into the pan, then add all the wet ingredients and stir until batter is smooth.

3Bake 35 minutes, test in center with a cake tester or tooth pick,to be certain it's done. If it comes out clean it is perfect! Cool and dust with powdered sugar if desires or serve plain.
