Since I received a copy of this recipe in 1980, I have baked this cake numerous times, and it is so good! I love that it doesn't need any eggs, and the ingredients are usually in my cupboard, so I can bake it when the spirit moves me to bake a cake. With a dusting of powdered sugar on top, or without, or with frosting, it is delicious and it can be made and baked in the pan.

  • SIFT ALL DRY INGREDIENTS TOGETHER
  • 1 1/2 c
    all-purose flour
  • 1 c
    sugar
  • 1/4 c
    cocoa powder, i used cacao powder
  • 1/2 tsp
    salt
  • 1 tsp
    baking soda
  • WET INGREDIENTS:
  • 1/3 c
    oil, i used safflower oil or vegetable oil
  • 1 tsp
    vinegar, i used raw organic apple cider vinegar
  • 1 tsp
    vanilla extract
  • 1 c
    cold water

    Preheat the oven to 350 degrees. Grease and flour a 9-inch cake pan.

    Sift the dry ingredients into the pan, then add all the wet ingredients and stir until batter is smooth.

    Bake 35 minutes, test in center with a cake tester or tooth pick,to be certain it's done. If it comes out clean it is perfect! Cool and dust with powdered sugar if desires or serve plain.
