Toward the end of summer, the Woodward Hotel would serve the most incredible, warm apple/zucchini/spice cake dripping with a rich caramel butter sauce. Made from farm-fresh local ingredients, it was the perfect ending to a delicious meal and signaled the very beginning of the summers harvest.

- BOUNTIFUL HARVEST CAKE:

1/4 cshortening

1 csugar
-
1 lgegg
-
1 tspvanilla

1 cflour
-
1/2 tspbaking soda

1/2 tspbaking powder

1/2 tspsalt
-
1/2 tspcinnamon
-
1/2 tspnutmeg or cloves (your choice)

1 1/2 cdiced apples
-
1 1/2 cshredded zucchini
-
1/4 cchopped walnuts or pecans
- CARAMEL BROWN BUTTER SAUCE:

1/2 cbutter
-
1/2 csugar
-
1/2 cbrown sugar
-
1/2 chalf and half
-
1/4 tspvanilla
How To Make woodward hotel's bountiful harvest cake

1Cake: Cream shortening and add sugar. Add egg and vanilla. Then add baking soda, baking powder, salt, cinnamon and nutmeg (or cloves).

2Add flour. Stir in apples, zucchini and nuts with a spoon.

3Place batter into a prepared 8" square baking pan. Bake at 350 degrees for 45-50 minutes until tests done with a toothpick.

4Caramel Butter Sauce: Melt butter in medium saucepan. Add sugars and cream. Bring to a very gentle boil. Turn heat to low. Simmer stirring occasionally, uncovered, for 15 minutes. Remove from heat and add vanilla. Spoon generously over warm cake.
