My husband's mom always made these and they were delicious. I had to really work hard to get the recipe right. She never measured anything!

Ingredients For whoopie pies

  • 3/4 c
    crisco
  • 2
    eggs
  • 2 c
    sugar
  • 2 tsp
    vanilla extract
  • 2 c
    milk
  • 3 tsp
    baking soda
  • 2/3 c
    cocoa, unsweetened
  • 1 tsp
    salt
  • 4 c
    all purpose flour
  • FOR FILLING
  • 1 c
    milk
  • 4 tsp
    flour
  • 1 c
    sugar
  • 1 tsp
    vanilla extract
  • 1 c
    crisco

How To Make whoopie pies

    Mix all above ingredients for cakes EXCEPT flour. Once ingredients are thoroughly mixed add flour, one cup at a time until blended. Drop by tablespoon or cookie scoop onto cookie sheet and bake at 425 degrees for about 7-10 minutes. Cake should spring back a little when touched. Remove from oven and cool thoroughly on cooling racks until ready to frost.

    For filling: place milk and flour in a pan and heat on medium/low until it starts to get thick. You should be constantly stirring so it doesn't burn. Once it is done, set aside to cool. Place sugar,vanilla and crisco in a bowl and add cooled milk/flour mixture. Beat with stand mixer until it can stand in a peak.

    Take one cooled pie and frost with filling then place another cooled pie on top. Then you have a whoopie pie! NOTE: This recipe is for a double batch. I am not allowed to make a single batch in my house! You can easily cut this recipe in half and it will make about 12-16 pies.
