I had last minute company coming, so I looked in my pantry and fridge...found some ingredients and got a little creative. Well, it was a hit! You can make a homemade cake and filling if you have the time. But, this was perfect for everyone!

1 boxclassic white cake mix-bake according to package directions.

1 cancomstock lemon pie filling
- MASCARPONE FROSTING:

8 ozcream cheese
-
8 ozmascarpone

1/2 cbutter, softened
-
2-2 1/2 cconfectioners' sugar

1 pinchkosher salt
-
heavy cream, enough to make smooth, spreading consistencey

1 tspvanilla extract

1Make cake as directed and let cool before assembling.

2Frosting: In the large bowl of an electric mixer fitted with the paddle attachment, beat the butter, cream cheese, salt and powdered sugar on medium-high speed until light and fluffy. You may want to add small amounts of heavy cream here. Beat in the mascarpone on very low speed until just combined. (Be careful; once you've added the mascarpone, excessive beating can make the frosting curdle.) Stir in the vanilla extract.

3Tip: If you'd like a little more lemon flavor, add 1 tsp. lemon juice instead of the vanilla to the frosting.
