In honor of my second cousin, snooksk9, I am posting my first recipe and it is a dessert! These bars are served at the hospital cafeteria where I work. They are so wonderful! Moist, sweet and delicious...whenever they are in the case, I cannot walk by without getting one. Enjoy!

Ingredients For white chocolate, cranberry oat bars

1 cdried cranberries

1/4 corange juice, fresh

1 1/2 cflour

1 1/2 cquick cooking oats

1 tspbaking powder

1/4 tspsalt
-
1 1/2 stickbutter or margarine, softened

1 1/2 cbrown sugar, firmly packed

2eggs
-
1/2 cvanilla or white chocolate chips

1/2 cchopped pecans
- FROSTING

1 cancream cheese frosting

1/8 tsporange extract
How To Make white chocolate, cranberry oat bars

1Preheat oven to 350 degrees. Combine cranberries and orange juice in microwavable bowl. Microwave on HIGH 30 seconds. Let stand 10 minutes. Meanwhile, combine flour, oats, baking powder and salt; set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, 1 at a time, beating until well blended after each addition. Gradually add flour mixture, mixing well after eachaddition. Stir in cranberry mixture, white chocolate and pecans.

2Spread dough into 9x13 inch baking pan sprayed with cooking spray. Bake 20 to 22 minutes or until center is set. Cool completely on wire rack before cutting to serve.

3For frosting, combine flavoring and frosting. Spread on completely cool bars. Serve.
