This recipe came from a military cookbook my sister-in-law gave me over 20 years ago. She has made this several times. It is wonderful! This cake can be left "naked", dusted with powdered sugar or frosted with your favorite frosting recipe. This one is topped with fresh lemon curd.

Ingredients For white buttermilk cake

1 cshortening

3 csugar

2 cbuttermilk, separated

4 csifted cake flour

1 Tbspbaking powder

1/2 tspbaking soda
-
1 tspsalt
-
1 tspvanilla

4 mdegg whites, stiffly beaten

How To Make white buttermilk cake

1Pre-heat oven to 350 degrees. Cream together shortening and sugar. Add 1/2 cup buttermilk.

2Combine sifted cake flour, baking powder, baking soda and salt. Add to shortening mixture. Alternating with remaining 1 1/2 cups buttermilk. Stir in vanilla. Gently fold in beaten egg whites.

3Pour into a 9x13" greased baking dish. Bake for 50 minutes.
