Ingredients For warm molasses cake with caramel glaze

  • 2/3 c
    firmly packed brown sugar
  • 1/4 c
    butter, softened
  • 1 lg
    egg
  • 1/2 c
    molasses
  • 2 c
    all purpose flour
  • 1 3/4 tsp
    baking powder
  • 3/4 tsp
    ground cinnamon
  • 1/2 tsp
    ground allspice
  • 1/4 tsp
    salt
  • 1/2 c
    fat free milk
  • cooking spray
  • caramel glaze, below
  • FOR THE CARAMEL GLAZE
  • 2/3 c
    firmly packed brown sugar
  • 2 Tbsp
    butter
  • 2 Tbsp
    fat free milk
  • 1/8 tsp
    salt

How To Make warm molasses cake with caramel glaze

    Preheat oven to 375F. Combine brown sugar and butter in a large bowl; beat at medium speed of a mixer 5 minutes or until well blended. Add egg; beat well. Add molasses; beat well. Combine flour and next 4 ingredients; stir well. Add flour mixture to creamed mixture, alternately with milk, beginning and ending with flour mixture.

    Pour batter into a 9-inch square baking pan coated with cooking spray. Bake for 27 minutes or until a wooden pick inserted in center comes out clean. Let cake cool in pan 45 minutes on a wire rack.

    For caramel glaze, combine all ingredients in a small saucepan. Place over medium heat, and cook until butter melts and mixture is smooth, stirring constantly with a whisk. Remove from heat; let cool slightly. Spread evenly over cake in pan. Serve warm or at room temperature.
