This was a favorite recipe of my mothers. She called it a wacky cake because you do not use eggs or milk in the ingredients. Another reason she liked it so well is you only dirted up one pot and the baking pan to make it.

Ingredients For wacky cake

1 1/2 cself rising flour

1 csugar

3 Tbspcocoa powder

1/3 ccooking oil

1 Tbspapple cider vinegar

1 tspvanilla extract

1 cwater
- COCONUT FROSTING

1/2 csugar

1/2 cmilk
-
1/2 ccoconut
-
1/2 tspvanilla extract

2 Tbspbutter
-
1 1/2 Tbspplain flour

1/2 cpecans, in pieces
How To Make wacky cake

1Pre-heat oven to 350.

2Combine flour, sugar, and cocoa in a 9x9 cake pan and mix well with a fork. Make three holes in mixture. Pour oil, vinegar and vanilla, one in each hole. Pour water over entire mixture. Mix well with fork, do not beat.

3Bake at 350 for 30 minutes or until toothpick inserted in center comes out clean. Frost in pan while cake is still warm.

4Frosting: Combine sugar, milk, butter and flour in small sauce pan. Cook on medium heat until thick, stirring as needed. Add coconut, nuts and vanilla, mix well and spread over warm cake.
