Ingredients For victoria sponge cake

  • 1 1/4 c
    self rising flour
  • 1 tsp
    baking powder
  • 3/4 c
    butter,softened
  • 3
    eggs, lightly beaten
  • 3/4 c. plus 2 t. organic sugar
  • 1 tsp
    vanilla extract

How To Make victoria sponge cake

  • 1
    Preheat oven to 350. Sift flour, and baking powder into a bowl, then add butter(cut into T's), then eggs, sugar and vanilla. beat together till throughly blended, about 2 min. on high speed. Scrape batter into pan. Bake 20-25 min. if using 2 pans. Or 30-35 min. for 1 pan. Remove from oven and cool.
