I created some recipes for flavored oat layer cakes. The secret is overnight oats inside every cake batter and sauteed oats inside the cake before frosting. This first cake recipe is vanilla and it tastes like vanilla ice cream on oats.

3 crolled oats, divided

1/2 cvanilla Greek yogurt

3/4 cvanilla flavored almond milk

6 tsppure vanilla extract, divided

1 boxfrench vanilla cake mix

1 cwater
-
3large eggs
-
1/2 cvegetable oil
-
1 Tbspmargarine
-
1/2 cdark brown sugar

1 cheavy cream
-
1/2 cvanilla flavored liquid creamer
-
3/4 cwhole milk
-
1packet instant vanilla pudding mix
-
8 ozcream cheese, softened
How To Make vanilla oats layer cake

1In a medium jar, combine 1 cup rolled oats, Greek yogurt, almond milk and 2 teaspoons vanilla extract; stir well with a fork until blended. Cover and refrigerate for 4 hours.

2Preheat oven to 350 degrees F. Coat two 9-inch round cake pans with cooking spray.

3In a large bowl, combine the cake mix, water, vegetable oil, eggs and 2 teaspoons vanilla extract. Beat on low speed for 30 seconds.

4Add the vanilla oat mixture to the cake batter and beat again on medium speed for 2 minutes. Pour into the cake pans.

5Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Allow to cool for 8 minutes.

6Heat the margarine in a large skillet over medium heat. Add remaining rolled oats and saute for 5 minutes. Stir in the brown sugar. Remove from heat. Transfer to a small bowl. Add 1 teaspoon vanilla extract; mix well. Set aside and reserve 1/4 cup.

7In medium bowl, combine heavy cream, liquid creamer, milk, vanilla pudding mix, cream cheese and remaining vanilla extract; whisk well until blended for 3 minutes.

8Place a layer of cake on a serving plate. Spread half the frosting evenly into the cake. Add the sauteed oats mixture onto the frosting.

9Place the second cake on top and spread remaining frosting on the top and sides of the cake. Top with 1/4 cup sauteed oat mixture.
