vanilla oats layer cake

I created some recipes for flavored oat layer cakes. The secret is overnight oats inside every cake batter and sauteed oats inside the cake before frosting. This first cake recipe is vanilla and it tastes like vanilla ice cream on oats.

  • 3 c
    rolled oats, divided
  • 1/2 c
    vanilla Greek yogurt
  • 3/4 c
    vanilla flavored almond milk
  • 6 tsp
    pure vanilla extract, divided
  • 1 box
    french vanilla cake mix
  • 1 c
    water
  • 3
    large eggs
  • 1/2 c
    vegetable oil
  • 1 Tbsp
    margarine
  • 1/2 c
    dark brown sugar
  • 1 c
    heavy cream
  • 1/2 c
    vanilla flavored liquid creamer
  • 3/4 c
    whole milk
  • 1
    packet instant vanilla pudding mix
  • 8 oz
    cream cheese, softened

How To Make vanilla oats layer cake

    In a medium jar, combine 1 cup rolled oats, Greek yogurt, almond milk and 2 teaspoons vanilla extract; stir well with a fork until blended. Cover and refrigerate for 4 hours.

    Preheat oven to 350 degrees F. Coat two 9-inch round cake pans with cooking spray.

    In a large bowl, combine the cake mix, water, vegetable oil, eggs and 2 teaspoons vanilla extract. Beat on low speed for 30 seconds.

    Add the vanilla oat mixture to the cake batter and beat again on medium speed for 2 minutes. Pour into the cake pans.

    Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Allow to cool for 8 minutes.

    Heat the margarine in a large skillet over medium heat. Add remaining rolled oats and saute for 5 minutes. Stir in the brown sugar. Remove from heat. Transfer to a small bowl. Add 1 teaspoon vanilla extract; mix well. Set aside and reserve 1/4 cup.

    In medium bowl, combine heavy cream, liquid creamer, milk, vanilla pudding mix, cream cheese and remaining vanilla extract; whisk well until blended for 3 minutes.

    Place a layer of cake on a serving plate. Spread half the frosting evenly into the cake. Add the sauteed oats mixture onto the frosting.

    Place the second cake on top and spread remaining frosting on the top and sides of the cake. Top with 1/4 cup sauteed oat mixture.
