The cake may be ugly, but it sure tastes good! This is a cake I sometimes make at Easter. I hope you enjoy it!

Ingredients For ugly duckling cake

  • 1 box
    yellow cake mix
  • 1 can
    fruit cocktail
  • 4
    eggs
  • 1/4 c
    vegetable oil
  • 2 1/3 c
    coconut, shredded divided
  • 1 box
    instant lemon pudding mix
  • 1/2 c
    brown sugar, firmly packed
  • 1/2 c
    pecans chopped
  • 1/2 c
    butter
  • 1/2 c
    sugar
  • 1/2 c
    evaporated milk

How To Make ugly duckling cake

    preheat oven to 325. grease and flour 9x13 inch pan.

    In mixer bowl, combine cake mix, fruit cocktail, eggs, oil, 1 cup of coconut and pudding. Beat well with mixer for 4 minutes and pour into prepared pan. Mix together pecans and brown sugar and sprinkle over batter.

    Bake in 325 degree oven for 45 minutes. While cake is baking, combine butter, sugar and evaporated milk in small pan. Cook until boiling and boil for 2 minutes. Remove from heat and add remaining 1 1/3 cup coconut.

    Remove cake from oven and spoon mixture over hot cake. Allow cake to cool some before serving. Cake can be served warm or cold.
