  • 3 c
    gluten free one to one baking flour
  • 1 Tbsp
    gluten free baking powder
  • 2 tsp
    baking soda
  • 2 tsp
    cinnamon, ground
  • 1/2 tsp
    ground nutmeg
  • 1/2 tsp
    ground ginger
  • 2 c
    ground raw sugar
  • 1……20oz can
    crushed pineapple, drained
  • 4
    eggs, room temperature
  • 2 tsp
    organic vanilla extract
  • 2 c
    grated carrots
  • 1 1/2 c
    chopped walnuts. optional
  • 1 c
    organic shredded coconut
  • 1/2 c
    organic applesauce

How To Make tyra's heavenly gluten-free carrot cake

    Pre-heat oven to 350 degrees Spray two round 8" cake pans with cooking spray

    Mix flour, baking powder, baking soda,cinnamon,ginger, and nutmeg in a bowl whisk together until thoroughly combined. Set aside

    Beat the sugar, and eggs together then add pineapple in a large bowl until smooth. Add vanilla and remix thoroughly
  • 4
    Slowly add flour mix into wet ingredients, beat at medium speed until mixed well, fold in carrots, walnuts, and coconut
  • 5
    Pour batter evenly into the prepared cake pans. Bake for 50 minutes or until toothpick inserted comes out clean

    Cool on wire racks, once cool Frost cake with gluten free cream cheese frosting
