Ingredients For turtle cake

  • CAKE
  • 1 pkg
    cake mix, chocolate fudge
  • 3
    eggs
  • 1/3 c
    vegetable oil
  • 1 c
    water
  • 4 oz
    sour cream
  • 1 pkg
    instant pudding, chocolate
  • GANACHE
  • 1 1/3 c
    heavy cream, whipped
  • 1/4 c
    butter
  • 16 oz
    60% cacao chocolate
  • CARAMEL
  • 1 can
    evaporated milk (12 oz)
  • 1 1/2 c
    sugar
  • 1 1/2 c
    light corn syrup
  • 6 Tbsp
    butter
  • 1 tsp
    pure vanilla extract

How To Make turtle cake

    Preheat oven to 350. Mix all of the ingredients together, pour into two cake pans and bake for 35 minutes. When done, set aside to cool.

    CARAMEL: Bring all ingredients (except vanilla) to a boil, stirring slowly. Keep it at a boil until it reaches soft ball stage. Use med-low heat and a pot that heats evenly. Once it is ready, pour into a buttered pan and set aside.

    GANACHE: Bring the cream and butter to a boil, pour over chocolate until smooth and all the chocolate is blended with the cream. Set aside and let cool.

    ASSEMBLY: Once everything is done, take one cake and place on a large plate or cake holder. Spread caramel over the cake and add pecans if desired. Place other cake on top and pour the ganache over the cake.
