When my husband and I first began dating,he told me he liked coconut cake.One of my Aunt's made a wonderful coconut cake so I asked her for the recipe.So I couldn't decide which coconut cake to make for my new boyfriend,in the end,I made the toasted coconut cake. Wm looked at the cake strangely(later he told me that cake didn't look like his Mother's coconut cake but decided to try mine since I had gone to the trouble of making him a cake) Well,he tasted this cake and said that was the best cake he ever had! He teases me to this day,he asked me to marry him so he could have this cake anytime!

Ingredients For toasted coconut cake

6 t butter

2 c shredded coconut

1 c finely chopped pecans

1 white cake mix( i like duncan hines)

ingredients specified on the cake mix box

8 oz cream cheese
-
2 teaspoons milk
-
2 teaspoons vanilla
-
3-3 1/2 c powdered sugar
How To Make toasted coconut cake

1Preheat oven to 350 degrees. Melt 3 T butter in a skillet add coconut and pecans,cooking and stirring till golden brown.Drain. Mix cake according to direction adding 1 c coconut mixture.Divide among 3 8-inch greased & floured cake pans.Bake according to directions. Cream remaining 3 T. butter and cream cheese until light.Add milk,vanilla and sugar 1 c at a time beating well until spreading consistency add remaining coconut mixture reserving 1/2 c to sprinkle on top.Fill and frost cakes.
