This has been a spring standard for almost 50 years. Everyone seems to like it so I keep sharing it with neighbors now that it is just my husband and myself.

Ingredients For tina's rhubarb cake

1 1/2 cbrown sugar, firmly packed

1/2 cbutter or butter flavored shortening

1egg

2 call purpose flour

1 tspbaking powder

1 tspbaking soda

1/2 tspsalt

1 csour milk (1 tbsp vinegar in 1 cup milk, let rest 5 minutes)

1 1/2 craw rhubarb sliced thinly

1/2 cbrown sugar, firmly packed

1 tspground cinnamon

1/2 cchopped nuts
How To Make tina's rhubarb cake

1Cream butter and brown sugar. Add egg and beat until creamy.

2Sift flour, baking powder, baking soda and salt

3Add flour mixture and milk to sugar mixture. Stir in rhubarb. In small bowl mix topping ingredients. Sprinkle on batter

4Bake in 9-13 greased pan 350 degrees for 30-35 minutes
