Ingredients For the world's best carrot cake

  • 2 c
    sugar
  • 1 1/2 c
    canola oil
  • 3
    eggs
  • 2 c
    carrots, grated
  • 1 sm
    can crushed pineapple, undrained
  • 1 c
    chopped walnuts
  • 1 tsp
    vanilla
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 3 c
    flour
  • cream cheese frosting
  • 1/2 c
    butter,softened
  • 1 pkg
    8oz. cream cheese
  • 1 tsp
    vanilla
  • 2 c
    powdered sugar
  • walnuts, chopped for top

How To Make the world's best carrot cake

    Cream together: sugar, oil, eggs until light. Add crushed pineapple, and rest of ingredients, except flour which you stir in lastly a little at a time..

    Bake in a greased (crisco) and floured, 9x13 inch pan.. (this is such a heavy cake, pan spray won't be enough) Bake at 350* for 40-50 minutes.. let cool completely.

    Beat Frosting ingredients together, and spread on cooled cake, and top with chopped walnuts to your taste.. cover and refrigerate for at least 4 hours, or overnight.. (this cake gets more moist and flavorful the longer it sits) ENJOY!!
