1 cvegetable oil

1 8 ozcan crushed pineapple drained (save juice and 1 tbs for topping)

2 call purpose flour

2 tspbaking soda

1 tspbaking powder

1 tspsalt

2 tspcinnamon

1 craisins
-
2 cshredded carrots
-
1 ccoconut
-
1 cchopped walnuts ( save 1 tbs for topping)
- CREAM CHEESE FROSTING

8 ozcream cheese
-
1/2 cbutter
-
1 tspvanilla extract
-
2 lbpowdered sugar

reserved pineapple juice
How To Make the real carrot cake

1beat eggs, vanilla and sugar

2add oil and crushed pineapple

3add flour,baking soda, baking powder,salt cinnamon,raisins,shredded carrots, coconut, and walnuts.

4pour into 9x13 pan. bake 350 for 45 min. toothpick test.

5CREAM CHEASE FROSTING

6BEAT ROOM TEMP. CREAM CHEESE, BUTTER, VANILLA,AND POWDER SUGAR TOGETHER. ADD PINEAPPLE JUICE AS NEEDED WHILE BEATING. CAREFUL NOT TO ADD TO MUCH. SPREAD OVER COOLED CAKE AND TOP WITH RESERVED PINEAPPLE AND WALNUTS
