Ingredients For the "orange dream" cupcakes

  • CUPCAKE
  • 7 Tbsp
    butter, salted
  • 1 c
    sugar
  • 1 1/2 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 c
    fresh squeezed orange juice
  • 1 Tbsp
    orange zest
  • 2 lg
    eggs
  • 7/8 c
    buttermilk
  • GLAZE
  • 1/2 c
    brown sugar
  • 1/4 c
    fresh squeezed orange juice
  • 2 Tbsp
    butter, salted
  • 1/2 tsp
    orange zest
  • 1/2 tsp
    vanilla
  • 8 oz
    walnuts, whole shelled
  • FROSTING
  • 8 oz
    cream cheese
  • 1 stick
    butter, salted
  • 4-5 c
    powdered sugar
  • 1 tsp
    vanilla

How To Make the "orange dream" cupcakes

    Pre-heat oven to 350 and roast walnuts for about 10 min. Set aside.

    In a medium bowl combine flour, baking powder, baking soda, and salt, set aside.

    In bowl of stand mixer, cream together butter and sugar.
  • 4
    Add eggs one at a time and mix well.
  • 5
    Add oj and zest. Mix well.

    Add in flour mixture to wet alternating with buttermilk until all is mixed in. Batter will be runny.

    Prepare muffin pan for cupcakes. Evenly distribute batter among muffin tin.

    Bake at 350 for 18-20 min or until toothpick comes out clean when inserted.

    Cool completely.

    To make glaze, combine sugar, butter, oj, and zest in a sauce pan. Simmer until syrup like texture forms. Stir in vanilla.

    Lay out walnuts on parchment and pour some of the glaze over, just to coat. Let dry.

    Mix up all frosting ingredients, adding powdered sugar slowly until desired consistency.

    Once cupcakes are cool, drizzle glaze over top. The cover with frosting and place a glazed walnut on top!
