7 Tbspbutter, salted

1 csugar

1 1/2 call-purpose flour

1 tspbaking soda

1 tspbaking powder

1/2 tspsalt

1/2 cfresh squeezed orange juice

1 Tbsporange zest
-
2 lgeggs
-
7/8 cbuttermilk
- GLAZE
-
1/2 cbrown sugar
-
1/4 cfresh squeezed orange juice

2 Tbspbutter, salted
-
1/2 tsporange zest
-
1/2 tspvanilla

8 ozwalnuts, whole shelled
- FROSTING
-
8 ozcream cheese
-
1 stickbutter, salted
-
4-5 cpowdered sugar

1 tspvanilla
How To Make the "orange dream" cupcakes

1Pre-heat oven to 350 and roast walnuts for about 10 min. Set aside.

2In a medium bowl combine flour, baking powder, baking soda, and salt, set aside.

3In bowl of stand mixer, cream together butter and sugar.

4Add eggs one at a time and mix well.

5Add oj and zest. Mix well.

6Add in flour mixture to wet alternating with buttermilk until all is mixed in. Batter will be runny.

7Prepare muffin pan for cupcakes. Evenly distribute batter among muffin tin.

8Bake at 350 for 18-20 min or until toothpick comes out clean when inserted.

9Cool completely.

10To make glaze, combine sugar, butter, oj, and zest in a sauce pan. Simmer until syrup like texture forms. Stir in vanilla.

11Lay out walnuts on parchment and pour some of the glaze over, just to coat. Let dry.

12Mix up all frosting ingredients, adding powdered sugar slowly until desired consistency.

13Once cupcakes are cool, drizzle glaze over top. The cover with frosting and place a glazed walnut on top!
