No joke. I've tried tons of brownie recipes and if you like them chewy and fudgy, then these are the best. The ice bath is key! It stops the cooking process so they stay nice and fudgy. You will be tempted to cook them longer than stated, but don't do it. They are so easy to make and it's a one pan recipe so cleanup is a breeze. Hope you all enjoy.

4 oz99% cacao unsweetened chocolate bar

1 stickbutter
-
1 1/4 csugar
-
1 tspvanilla

1/4 tspsalt

2eggs
-
1/2 cflour
How To Make the fudgiest brownies you'll ever eat

1Preheat the oven to 400

2Prepare and 8 inch square METAL baking pan. (It's important to use metal because a glass pan may break in the ice bath.) Line with parchment paper, so it covers all sides.

3Break up the chocolate and melt it with the butter in the top half of a double boiler. Stir to mix, and remove from heat.

4Mix in the sugar, vanilla and salt. Yep, right in the same pan!

5Add eggs, one at a time, mixing after each.

6Stir in the flour, just until incorporated. Don't over mix!

7Scrape all into your prepared pan. No need to grease when using parchment paper.

8Bake at 400 for 20 minutes. DO NOT OVER BAKE! Test with a toothpick or knife, and if it's clean, take them out of the oven!

9Now here's the secret trick. While they're baking, prepare the ice bath by filling a large pan (I use my lasagne pan) with cold water and ice.

10Take the brownies out of the oven and float the pan in the ice bath. Be careful not to get them wet.

11Cool and cut into 9 to 16 squares and enjoy with an ice cold glass of milk.
