I received this recipe from a co-worker years ago. Its the best carrot cake I've ever made!

2 cflour

1 tspbaking soda

1 tspbaking powder
-
1 tspsalt
-
1 tspcinnamon

2 csugar

1 1/2 cvegatable oil

4eggs
-
3 cgrated carrots
-
**for frosting**
-
8 ozcream cheese (room temperature)
-
1 lbconfectioners' sugar

1/2 cbutter
-
2 tspvanilla
How To Make the best carrot cake

1Mix all ingredients, blend in oil, eggs (1 at a time) and carrots.

2Bake at 350 degree for 40 to 45 minutes in a 9" round pans.

3Mix all ingredients for frosting in a bowl and whip until combined and fluffy. Spread on cooled cake and enjoy!!
