I got this from a co-worker who made my wedding cake. Everyone at work loves this cake and has her make it for special occasions.

Ingredients For terri's carrot cake

  • CAKE
  • 2 c
    flour
  • 1 tsp
    baking power
  • 1 1/2 tsp
    baking soda
  • 2 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 1 c
    chopped pecans
  • 1 1/2 c
    vegetable oil
  • 2 c
    sugar
  • 2 c
    grated carrots
  • 8 1/2 oz
    can crushed pineapple, well drained
  • 4
    eggs
  • 1 tsp
    vanilla
  • ICING
  • 1 stick
    butter
  • 1 tsp
    vanilla
  • 1 lb
    powdered sugar
  • 8 oz
    cream cheese softened

How To Make terri's carrot cake

    CAKE-Mix together oil, sugar, eggs, then add remaining ingredients. Grease and flower 3-9" round pans. Pour batter into pans and bake at 350 degrees for 25 to 30 minutes or until done. Toothpick stuck in middle should come out clean.

    ICING-Combine all ingredients and beat until smooth. Also great with pecans in the icing as well.

    Put icing between stacked layers. Ice top and sides of cake.
