This is a Wafer Cake that i modified for 2. One to eat, and one to freeze for another time. Some time I like a little something sweet at snack on. Hope you like the out come, my family does. ; )

Ingredients For taquila wafer cake 4 one

  • 1 c
    vanilla wafers cookies
  • 2
    eggs
  • 2 Tbsp
    milk
  • 1/2 stick
    butter, room temperature
  • tiny pinch
    salt
  • 1/4 c
    coconut flakes
  • 1/4 c
    chopped peacan
  • 1/2 c
    sugar
  • 1/2 Tbsp
    powdered sugar
  • 1/4 c
    tequila
  • IT IS BEST TO USE MINI PANS FOR THIS RECIPE.

    Set Oven at 325 F Cream together,butter, sugar and salt. Add in eggs (one at a time). Add all of crushed wafers and Milk. Add coconut flakes and pecans . Spray pans with Non-stick cooking spray.

    Bake in small loaf pan for 35 to 45 min. While waiting on cake to bake, in small bowl mix together powdered sugar and tequila. Set aside for later. Test with toothpick for doneness. Test the center of cake, the toothpick should come out clean.

    While still warm, pierce with skewers or knife tip. Pour tequila mixture over the top. Let cool. ENJOY !
