Ingredients For tailgate apple cake

  • 3 c
    cooking apples, peeled and sliced
  • 1 1/2 c
    vegetable oil
  • 2 c
    sugar
  • 3
    eggs
  • 2 Tbsp
    vanilla extract
  • 3 c
    pre-sifted flour
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 3 tsp
    cinnamon, ground
  • 1 c
    pecans or walnuts chopped (reserve some for decoration)
  • TOPPING:
  • 1 c
    brown sugar, firmly packed
  • 6 Tbsp
    butter
  • 1/4 c
    evaporated milk

How To Make tailgate apple cake

    Preheat over to 325 degrees. Grease a 9" x 13" glass baking dish or pan. Prepare apples and set aside.

    Blend the oil, sugar, eggs and vanilla extract; add the flour, salt, baking soda and cinnamon. Mix well; stir in the apples and nuts. Pour into prepared pan and bake for 45- 55 minutes - until done.

    Topping: Combine brown sugar, butter and milk in a small saucepan; bring to a boil and pour immediately over the baked hot cake. The icing will partially be absorbed into the cake leaving a caramel topping. Trim with reserved nuts. Do not cut for at least 1 hour. Yields 20 squares. Note: If canned apples are used, use 1 1/2 cans of unsweetened pie apples. Drain apples and pat with paper towels.
