I made these this weekend for company,everyone loved them. My niece said she wants them for Thanksgiving. I added the candied pecans at the last minute,but they were delicious!

Ingredients For sweet potato cupcakes

1 boxduncan hines spice cake mix
-
3eggs
-
1 1/3 cwater
-
1/3 coil
-
1 smpkg vanilla instant pudding

1 csweet potato puree
-
8 ozcream cheese,softened
-
1/4 csugar
-
1egg
-
1 tspvanilla
-
cream cheese frosting
-
candied pecans,optional
How To Make sweet potato cupcakes

1Preheat oven to 350 degrees.

2Prepare cake mix according to directions adding vanilla pudding and potato puree.

3In a separate bowl, beat cream cheese, sugar, egg and vanilla well.

4Spray cupcake pans or muffins cups with Pam. Spoon about 2 T cake batter in cups add 1 T cream batter on top, top with another 1-2 T. of cake batter.

5Bake cupcakes 18-21 minutes.

6Cool on wire Crack. Frost with your favorite cream cheese frosting(please don't use the canned stuff!) and decorate tops with candied pecans.
