I got this recipe from a friend a few years ago and finally made it last month! This is an incredible dessert or even sweet breakfast. I highly recommend this for Thanksgiving or Christmas!

Ingredients For sweet potato brownies

1 cbutter, room temperature

1 cbrown sugar, lightly packed

1 cwhite sugar

4eggs
-
2 tsppure vanilla extract

1 1/2 call purpose flour

1 tspbaking powder

1 tspsalt

2 csweet potatoes - skinned & mashed
- ICING

1 cconfectioners' sugar
-
2 Tbspmilk, 2%

2 Tbspbutter, melted
How To Make sweet potato brownies

1**Preheat oven to 350 In large bowl, blend together: butter, brown & white sugar till smooth. Mix in eggs, 1 at a time. Then vanilla. In seperate bowl, mix: flour, baking powder & salt. Add flour to wet mix slowly till blended.. fold in sweet potatos. (optional) Line pan with parchment paper pour into 13x9x2in pan Bake for 30 minutes or so..

2Icing Melt butter, mix into milk & sugar. Spread on top of warm brownies.
