This is a remarkably moist and delicious cake. You can actually smell and taste the wonderful apples while you are making the cake, while it is baking and when you are finally eating it! This is a wonderful potluck dessert, but it is soooo good for a family dinner, too. I hope you enjoy it as much as my family does! P.S. I like to use Granny Smith or Gala apples because of their crisp, sweet flavors. I do not recommend McIntosh apples (they are too juicy) or Delicious (don't seem to have enough flavor).

Ingredients For sweet 'n tender apple sheet cake

1 1/2 ccanola oil

2 csugar

3 cshredded granny smith apples (peeled and cored)

3 lgeggs

3 call purpose flour
-
1/2 tspsalt

1 tspvanilla extract

1 tspcinnamon

1 tspbaking soda
- FROSTING:

8 ozcream cheese, room temperature

1 tspvanilla extract

1 stickbutter, room temperature

4 cconfectioners' sugar, sifted
How To Make sweet 'n tender apple sheet cake

1Preheat oven to 325 degrees.

2Put all cake ingredients in large mixing bowl and beat on medium speed until well-mixed, scraping the bowl with a spatula as needed.

3Pour batter into ungreased 10x15x2 sheetcake pan.

4Bake 35-45 minutes, or until cake pulls away from sides of pan and a toothpick inserted into the center of the cake comes out clean.

5Cool completely before frosting.

6To make frosting, put softened butter and cream cheese in medium mixing bowl and cream on medium speed until well-mixed.

7Add sifted powder sugar, one cup at a time, and beat well after each addition.

8Add vanilla and beat on low speed to blend.

9Frost top of cooled cake.
